John and Jen Kimmich opened The Alchemist as a Waterbury brewpub in 2003, where Heady Topper, an 8% unfiltered double IPA, was an occasional offering. They opened a cannery in August 2011, the same month Hurricane Irene destroyed the pub. Sold almost only in Vermont, it became one of the most sought-after US beers.
