Paul Cantillon and his wife Marie Troch founded the brewery in 1900. At the time Brussels had more than 100 breweries, and Cantillon is the only one still in operation. It brews only lambic, which ferments spontaneously in open "coolships" and is then aged in wooden barrels. It also houses the Brussels Gueuze Museum.
