The Kiuchi family brewery was founded in 1823 to make sake and shochu. It started brewing beer in 1996 after Japan relaxed its microbrewery laws. Several Hitachino Nest beers combine European styles with Japanese brewing methods, such as XH, which is aged in shochu casks.
